Directions
1. Start the Spanish rice by following directions on the package.
2. While the rice is cooking hollow out the bell peppers and rinse.
Tip: Dice up the top rings of the peppers and add to your cooking rice.
3. Place peppers in a large stewing pot. Fill peppers with water all the way to the top of peppers. Then fill the pot with water to the top of peppers or as high as you can go without over flowing the pot. Bring to a gentle boil for 25 minutes.
4. Grate three cups of pepper jack cheese.
5. When peppers are tender but still firm, remove from heat and place in a casserole dish.
6. When the rice is ready, remove from stove and stir.
Tip: If you like it spicy this would be a good time to add Hot and Sultry Passion Spice to taste.
7. Layer the peppers with cheese, rice, cheese, rice.
8. Place your dish of peppers under the broiler for 1-3 minutes or until the cheese becomes melted and golden brown.
Transfer to a serving dish and enjoy.
